Note from Jessica: What an honor to have one of my favorite blogging buddies guest post for me today. I love Becky’s Your Modern Family blog! Becky’s sharing her recipe for “Pretzel Chicken” today, and boy, am I excited to try this! It’s perfect for us, since it’s dairy, egg, and peanut-free already! If you’re omitting gluten also, you could use Glutino’s brand pretzels and I bet it would be delicious! Thanks for sharing this recipe, Becky!
Hi! I’m Becky from Your Modern Family and I am so excited to be sharing my favorite dinner recipe with you today!
I love to find meals that our kids will love (and meals that will nourish their bodies!) With that being said, you have to try this Pretzel Chicken recipe! Our family ate this without complaints (if you have kids, you know how rare that can be!) and we had leftovers for lunch the following day.
Easy Pretzel-Coated Chicken Recipe:
Ingredients:
Instructions:
- Preheat the oven to 400° F.
TIP to make it crispy: You will want to place a wire rack (cooking rack) on top of a cookie sheet for this, to let the bottom of the chicken crisp up like the top. - Next, take your pretzels and place them in a bag or in a food processor. Crush or process the pretzels until coarsely ground (small crumbs w/ a few peices) then add them to a large, shallow bowl.
You will use the food processor again in a minute, so just clean (wipe) the food processor to get ready for the dip. SET THIS ASIDE & MAKE THE DIP. - DIP RECIPE: Using your clean food processor, you are going to mix: mustard, honey, oil, vinegar & water to make your dip/coating. You can always add some salt & pepper to spice it up a bit. I always do.
- Set aside 1/2 and put it into the refrigerator to use during dinner to dip your chicken.
- Take the half of your dip that you left out and coat the chicken in it (I put mine into a bowl & dip the chicken into it to coat them.)
- Now dip your chicken from the dip into the crushed pretzel mixture. (So: Chicken goes into dip & then into pretzels.)
- Place the chicken on the wire rack & bake at 350 for 25 minutes (chicken will be 170 deg. when done).
- Use the dipping sauce for the chicken when it is finished. Pour some on top or use it to dip (we dipped ours).
- Enjoy! For some easy dessert recipes, see my healthy chocolate chip cookies, my easy 3 ingredient cookies, my oreo brownies or my jello cake!
