Gluten-Free Almond + Oat Waffles

I’d like to shout-out to ChatGPT for helping me create this recipe 🙂 I’ve made some tweaks over time and here is our favorite recipe that I make several times a week! The good thing is if you have people around who are counting their protein, each waffle has a ton of protein (around 12 grams!).

Ingredients

  • 1 cup almond flour
  • 1 cup oat flour
  • 3 eggs
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp or more cinnamon
  • 1 cup milk (I use coconut milk; canned is the best!)
  • 2 T oil (I use coconut or avocado – you could use melted butter)
  • 2 T maple syrup or honey (I usually use honey as I like how it browns the waffles)
  • 1 tsp vanilla

Instructions

  • mix all ingredients
  • let sit for 5-10 minutes for the oats to soak up the moisture
  • cook according to waffle maker directions

This is my non-toxic waffle maker that I LOVE. One recipe makes 6 regular-sized waffles. I usually double this recipe. They freeze very well and also stay in the fridge for a few days. The kids just pop one in the toaster.
